This course examines Filipino cuisine as a socio-cultural, historical, and political site through which national identity, colonial memory, power relations, and everyday life are negotiated. Using postcolonial theory, cultural studies, and anthropology, the course interrogates how food practices reflect Spanish and American colonial legacies, indigenous traditions, class structures, regional identities, and transnational Filipino experiences.
